Ingredients
  • 1 package Wellshire Maple Bourbon Bacon can substitute other Wellshire Thick-Sliced Bacons if desired
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1 tsp rosemary
  • 2 tbsp olive oil
  • 1 tbsp maple syrup
  • 1 1/2 lbs. pumpkin and/or butternut squash (peeled, seeded, and cut into 2" chunks)
Instructions
  1. Preheat oven to 350°F.
  2. Place a wire rack in a rimmed baking sheet (line your baking sheet with foil to make clean up easier if desired).
  3. In a mixing bowl, mix together ginger, cinnamon, rosemary, olive oil, and maple syrup.
  4. Add the pumpkin and/or butternut squash to the mixture, toss together until all of the pieces are covered.
  5. Cut the bacon sliced in half.
  6. Wrap each spiced pumpkin and/or butternut squash in a half slice of bacon.
  7. Place on the wire rack so that the ends of the bacon slice are on the bottom (this stops them from unraveling while cooking).
  8. Using a spoon, drizzle any remaining spice mixture over the top of each bacon-wrapped piece of pumpkin and/or butternut squash.
  9. Bake for 40 minutes.
  10. Remove from the oven and serve!
