We were entertaining some family last week and needed a quick and impressive lunch to satisfy the masses. This panini recipe was the answer to our family lunch. The beauty is that with the variety of lunch meats we had on hand, we could customize to everyone’s satisfaction, so next time you’re in a lunch bind, just grab these few fresh ingredients and get ready to impress.
 

Ingredients

  • 2 slices ciabatta bread
  • 1 tablespoon pesto (jarred or fresh)
  • 1 slice tomato
  • 2 slices fresh mozzarella
  • 2-3 slices Land O’Frost Premium Oven Roasted Turkey
  • 1 tablespoon unsalted butter, softened

Instructions

  1. Preheat the panini press on medium-low heat.
  2. Spread pesto on each bread slice, then top with slices of tomato, mozzarella and lunch meat.
  3. Spread butter on the outsides of the sandwich.
  4. Place in the panini press, and cook until the bread is golden brown and the mozzarella is melted, about 5 minutes.
  5. Serve warm with your favorite salad!
